Serves 4
4 potatoes (about 400g)
1 tsp salt for boiling the potatoes
1/3 cucumber
1/3 carrot
1/2 onion
2 boiled eggs
2 sliced ham
2 tsp Sushi vinegar
6 tbs Japanese mayonnaise
white pepper
1. Wash the potatoes and put them in a pan. Pour water over them till they are just barely covered and add 1 tsp of salt. Boil them in their skins until tender. Poke a bamboo skewer into a potato to see if it is cooked through in the center.
2. Drain the potatoes. Use kitchen paper or tea towels and peel the skin. Put them into a bowl and mash them well. Add 2 tsp of vinegar into the potatoes and stir well.
3. Remove egg shells and chop them in around 1cm square or less.
4. Cut the ham into 1cm wide slices.
5. Slice the cucumber, the carrot and the onion very thinly. Add a pinch of salt and let it sit for 10 mins until the vegetables exclude their juices. Squeeze firmly to get rid of the juices. (*Japanese cucumbers have less seeds and water. If you use other cucumbers, you may need to take the seeds off before slicing them.)
6. Stir the potato, other veges, eggs, mayonnaise and pepper to coat evenly.
